Ever since I watched Iliza Shlesingers special on Netflix whenever I think about fall I immediately think #pumpkineverything.

These pumpkin cinnamon rolls with cream cheese frosting are absolutely delicious! Plus, they are gluten-free, vegan, and refined sugar-free. If you want fluffier rolls (and don’t mind them not being gluten-free) I would recommend using bread flour instead of gluten-free flour.

Cinnamon is a spice that is made from the inner bark of several types of trees from the genus Cinnamomum. The sticks are made by cutting the stem of the cinnamon tree and extracting the inner bark. When the inner bark dries it curls which form cinnamon sticks. The sticks can then be ground into cinnamon powder.

Delicious Pumpkin Cinnamon Rolls with Cream Cheese Frosting. Warm, gooey, and perfectly sweet.
Ingredients
  • DOUGH:
  • 1 cup coconut milk, warmed
  • ⅓ cup coconut sugar
  • 2¾ teaspoons instant yeast
  • 1 cup pumpkin purée
  • ⅓ cup coconut oil or non-dairy butter, melted
  • 5 cups gluten-free flour blend
  • ¾ teaspoon xanthan gum
  • ¼ teaspoon pink Himalayan salt
  • FILLING:
  • ⅓ cup coconut oil or non-dairy butter, melted
  • ¾ cup coconut sugar
  • 1½ tablespoons cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon nutmeg
  • ¾ teaspoon allspice
  • ¾ teaspoon cloves
  • Optional: ½ cup pecans, chopped
  • CREAM CHEESE FROSTING*
  • ¼ cup coconut cream**
  • 2 tablespoons coconut oil
  • ¼ cup maple syrup
  • ¾ cup cashews, soaked and strained
  • ½ teaspoon vanilla extract
  • Dash of pink Himalayan salt
  • 1 tablespoon lemon juice
Instructions
  1. Oil a large bowl with coconut oil and set aside.
  2. Add the warm coconut milk and sugar to the bowl of a stand mixer. Sprinkle the yeast on top and let sit for 5 minutes to activate. Stir in the pumpkin and melted coconut oil. Mix until just combined. Stir in the flour, xanthan gum, and salt with a wooden spoon until a dough begins to form.
  3. Then place the dough hook adjustment on the mixer and knead the dough on low speed for about 8 minutes, until it forms a slightly sticky ball.
  4. Transfer the ball of dough to the greased bowl. Cover the bowl with plastic wrap and a warm towel. Allow the dough to rise for about 1 hour, until doubled in size.
  5. Once the dough has risen, grease a 10-inch round pie pan and set aside.
  6. On a lightly floured surface, roll out the dough into a thin rectangle, about 18x11 inches. Spread the coconut oil or butter over dough. Then evenly sprinkle the sugar and spices over the dough.
  7. Starting at one end, tightly roll the dough, situating it seam side down. Cut into 1½-inch sections with a serrated knife. Place rounds into the prepared pie pan and cover with plastic wrap. Set the pan on top of the oven while it heats to 350°F.
  8. Remove plastic wrap and bake in the oven on the centre rack for 30 to 35 minutes. Let the cinnamon rolls cool while you prepare the cream cheese frosting.
  9. Place all of the cream cheese frosting ingredients into a high speed blender and blend until smooth and creamy. Use the frosting as a spread or dip with the cinnamon rolls.
