Cilantro Lime Cauliflower Rice

This recipe is super easy and embodies a bold fresh flavour. It can be eaten cooked or raw. Plus it's customizable to make into a meal by adding your favourite vegetables, beans, and sauce or enjoy it as a side.
  • 1 medium cauliflower head, cut into small equal florets
  • 1 teaspoon coconut oil
  • 1 garlic clove, minced
  • ½ teaspoon pink Himalayan salt, or to taste
  • ¾ cup cilantro, chopped
  • 1 lime, juiced
  1. Place florets into a food processor and pulse into a coarse rice like texture.
  2. Place cauliflower into a large bowl lined with paper towel.
  3. Press out excess water.
  4. Heat coconut oil in a large pan and sauté the garlic.
  5. Stir in the prepared cauliflower and cook for 5 minutes or until rice is tender.
  6. Stir in the salt, cilantro, and lime. Serve warm.
