Cashew-Dill Dipping Sauce

This quick and easy cashew-dill sauce is perfect for dipping and spreading to compliment just about anything.
  • 1¼ cups cashews, soaked and strained
  • ½ cup fresh dill, plucked
  • 1 garlic clove, peeled and minced
  • 2 teaspoons apple cider vinegar
  • 2 tablespoons lemon juice
  • ½ cup filtered water
  • Pink Himalayan salt and pepper, to taste
  1. Place the cashews, garlic, apple cider vinegar, lemon juice, water, and salt/pepper in a high speed blender (or food processor) and blend until smooth and creamy.
  2. Blend in the fresh dill, removing the lid in between blending as needed to push down herbs sticking to the sides of the blender.
