Daily Eats: Still on Holidays, Reflecting on My Vipassana Retreat

Good-morning!

I’m here with another daily eats post. I want to remind us all that these posts are not for comparison. These posts are intended to inspire you for food ideas and to show you it’s possible to break up with your diet and feel good in your body eating what you truly want.

I hope you enjoy!

Breakfast (8:10 am)

Technically I’m still on holidays since my retreat but I woke up early this morning to meditate for one hour and do some writing. After this I was feeling very hungry, so I made myself a sweet and savoury breakfast sandwich on sourdough. I made it with a drizzle of olive oil, Vegenaise, handful of spinach, tomato slices, tempeh grilled in maple syrup, and kelp pink Himalayan salt/pepper to taste. This is exactly what I needed to satisfy my hunger.

Lunch (12:40 pm)

After breakfast, I caught up on emails and began writing a reflection on my 10-day silent Vipassana retreat. If you noticed in the email I sent out yesterday I also posted this delicious recipe which I’m eating the leftovers of for lunch today. I enjoyed some of this rice mixture but I was really craving a smoothie so I also made a big smoothie. I made this smoothie with 2 bananas, spinach, chlorella, cacao, maca, strawberries, peanut butter, and water. Similar recipe here.

Snack (4:00 pm)

After lunch I continued writing my reflection (it’s going to be a long blog) and checked my schedule for the rest of the week.

If you’re thinking about working together on your wellness and aren’t on the calendar yet, you can read more about what my coaching will offer you and schedule here.

Before heading off to the gym, I made myself another smoothie, this time it was a chocolate orange smoothie made with coconut milk.

Dinner (7:10 pm)

After I got back from the gym, I showered, got into my pyjamas, and meditated for 15 minutes. Then I ate this super delicious and flavour-packed gingered sweet potato and lentil curry with coconut. I ate it with rice and topped it with a garnish of cilantro. I could’ve had two bowls but I still wanted dessert, so…see below.

If you want me to do a recipe post on this dinner, I would be more than happy. Let me know in the comments below.

Dessert (7:30 pm)

I received these chocolates for Valentine’s day before I left for my retreat so I decided to open all of them (I ate some before I had left) and try a few pieces of each flavour. They were all so good.

I drank about 2 litres of water throughout the day.

Overall, I feel like I was more hungry than usual today and that’s okay. Everything I ate was super satisfying. Always remember to listen to your intuition.
