Cilantro Lime Cauliflower Rice

Inspired by the Medical Medium’s Thyroid Healing protocol I’ve been experimenting with more gluten-free recipes.

Today I’m sharing a cilantro lime cauliflower rice recipe with you that’s gluten free, vegan, raw (or cooked), and full of flavour. Ever since my mom made cilantro lime rice for me as a child it has been one of my favourite rice combinations.

It’s only requires 6 simple ingredients and less than 15 minutes to make.

Cilantro is also commonly known as Chinese parsley, coriander, or scientifically speaking, Coriandrum Sativum. The word coriander refers to the entire plant: leaves, stems, and seeds. In recipes, coriander is most commonly used when speaking in terms of the ground spice or seeds. Whilst cilantro (the Spanish name for coriander) is used when referring to the fresh leaves. It’s important not to confuse the two of them because they embody completely different tastes. Cilantro is one herb that people either love or hate. I personally find that it adds a bold, fresh flavour to dishes.

Did you know? Cilantro is a member of the umbellifer (apiaceae) family which includes parsley, carrot, and fennel.

Cilantro is a natural cleanser of both the body and mind. This essence supports us in letting go of old patterns of thinking that no longer serve us. We can more easily let go of illusions.

Nutritionally speaking, it supports the body by providing it with essential components such as fibre, vitamins A, C, E, K, calcium, iron, potassium, and magnesium. Cilantro is particularly beneficial for detoxing heavy metals and other toxins from the body, specifically the brain. Due to its’ natural antimicrobial and antibacterial properties, it helps to prevent urinary tract infections, protect against food poisoning, soothe skin irritation, lower blood sugar levels, and protect against cardiovascular disease. It’s also beneficial for lowering anxiety and improving sleep and boosting libido.

Serves: 2-3 cups
This recipe is super easy and embodies a bold fresh flavour. It can be eaten cooked or raw. Plus it's customizable to make into a meal by adding your favourite vegetables, beans, and sauce or enjoy it as a side.
  • 1 medium cauliflower head, cut into small equal florets
  • 1 teaspoon coconut oil
  • 1 garlic clove, minced
  • ½ teaspoon pink Himalayan salt, or to taste
  • ¾ cup cilantro, chopped
  • 1 lime, juiced
  1. Place florets into a food processor and pulse into a coarse rice like texture.
  2. Place cauliflower into a large bowl lined with paper towel.
  3. Press out excess water.
  4. Heat coconut oil in a large pan and sauté the garlic.
  5. Stir in the prepared cauliflower and cook for 5 minutes or until rice is tender.
  6. Stir in the salt, cilantro, and lime. Serve warm.
